Ingredients:

  • 4 walleye fillets
  • 2 eggs, beaten
  • 1/2 C. flour
  • 1/2 tsp. garlic powder
  • 1 pinch salt
  • 1/2 tsp. black pepper
  • 2 C. crushed saltine crackers
  • Oil for frying 
  • 1 lemon, in wedges

Directions:

Remove all bones and skin; cut fillets into smaller pieces. Place beaten eggs in bowl; set aside. Combine flour, garlic powder, salt, & pepper in separate bowl. Pour cracker crumbs into another bowl. Heat oil in deep-fryer or large cast-iron skillet over med-high heat to 375º. Dip fillets in flour mixture, then in the eggs, and then in the cracker crumbs. Set aside. Test oil—it will crackle & pop when a cracker crumb is dropped into it. Carefully lower 2 fillets into hot oil. Cook until browned, about 3 min. per side. At 3 min., turn fillets with tongs. Transfer plate on a paper towel; repeat until all fillets are cooked. Serve with fresh lemon wedges.
