Ingredients:

  • 2 eggs   
  •  1 Tbsp. water
  • 1/3 C. dry bread crumbs
  • 1/3 C. instant potato flakes
  • 1/3 C. grated Parmesan cheese
  • 1 tsp. seasoned salt
  • 4 (4 oz.) walleye fillets

Directions:

Preheat oven to 450º. Grease a baking sheet. Beat eggs & water together in a bowl until smooth; set aside. Combine the bread crumbs, potato flakes, and Parmesan cheese in separate bowl with seasoned salt until evenly mixed. Dip walleye fillets into the beaten egg, then press into the bread crumb mixture. Place onto prepared baking sheet. Bake in preheated oven until fish is opaque in center and flakes easily with a fork, 15 to 20 min.
