Fried Walleye:

• 4 walleye filets, trimmed & boned (2 lb.)

• 3 eggs beaten

• 1/2 cup flour

• 3 Tbsp. Old Bay seasoning

• 1 1/2 c. Panko crumbs

• 1 qt. vegetable oil

• 1/2 tsp. salt

• 1/8 tsp. pepper

   Cut filets into pieces. Heat oil to 375º. In bowl, combine flour with Old Bay. In separate bowl, beat 3 eggs. Dredge fish in flour mixture; dip into egg mixture and into panko crumbs. Fry pieces in batches until golden brown. Season with salt & pepper; serve with tartar sauce.


Tartar Sauce:

• 2/3 cup mayonnaise

• 1/2 tsp. lemon zest

• 1 Tbsp. lemon juice

• 1/2 tsp. Dijon mustard

• 2 Tbsp. olive oil

• 1 Tbsp. minced parsley

• 1 Tbsp. minced capers

• 1 Tbsp. minced sweet pickle

• 2 tsp. minced tarragon

   Whisk together mayo, lemon zest, lemon juice and mustard in med. bowl. Whisk in olive oil. Season with the parsley, tarragon, minced capers and sweet pickles. Refrigerate sauce until ready to serve.
